Pumpkin Pie

Ingredience

9-inch unbaked pie shell
1/2 Cup packed dark brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 pinch of ground cloves
1 1 6-ounce can pumpkin puree
1 1/4 Cups evaporated skim milk
3 large egg whites
Directions

Preheat oven to 450 degrees Fahrenheit.
In a large bowl, beat all filling ingredients until no lumps remain. Pour into pie shell and bake for 10 minutes.
Reduce heat to 325 degrees Fahrenheit and bake 50 minutes more, or until a knife inserted in the centre comes out clean. To avoid over browning of fluted edge, cover edge with narrow strips of aluminum foil. Remove foil during the last 15 minutes of baking.

Chocolate Chip Cookies

Ingredience

1/2 cup shortening
1 tsp. Vanilla
1/2 cup sugar
1 egg, well beaten
1 1/2 cups flour
1/2 teaspoon Salt
1/2 teaspoon Soda
1 cup chocolate chips
Directions
Cream shortening, vanilla and sugar. Add egg and beat thoroughly. Add flour and other dry ingredients. Stir in chocolate chips. Drop from teaspoon onto greased baking sheet. Bake at 375 degrees for 12 minutes. (Makes 5 dozen cookies)

Coconut Cake Ingredience
2 sticks margarine
3 cups flour, self-raising
2 cups sugar
4 eggs
1 teaspoon Vanilla Essence
1 cup milk
Directions
Cream shortening thoroughly. Add sugar and eggs. Cream togetheruntil light and fluffy. Sift flour and add alternately with milk, a small amount at a time, beating well after each addition. Add flavoring. Pour into 3 well greased 9 inch layer cake pans and bake in moderate oven 375 degrees for 30 minutes.
Seven Minute Frosting
3 egg whites, unbeaten
2 cups sugar
1/2 cup water
2 tablespoons light corn syrup (GoldenSyrup)
1 tablespoon vanilla essence
Directions
Combine egg whites, sugar, water and corn syrup in top of doubleboiler. Beat until thoroughly mixed. Place over boiling water beating constantly for approximately 7 minutes, or until frosting will stand in peaks. Remove from heat,add vanilla and beat until thick enough to spread over each layer and sprinkle generously with coconut.
